I LOVE yorkshire puddings and when I found out I was both coeliac and lactose intolerant I was gutted. However, I’ve now perfected the most beauuuuutiful gluten/dairy/soy free yorkshires by using almond milk. If I knew it was this easy I would have made them months ago!
All you need…
- 2 tablespoons of gluten free flour
- 2 eggs
- Pinch of salt
- 150ml almond milk
- 2 teaspoons of olive oil
How you make it…
- Preheat the oven to 220 degrees
- Mix together the 2 eggs and salt, then gradually whisk in the gluten free flour
- Once smooth, gradually add the almond milk and keep whisking
- Leave the mix to stand for 15/20 minutes
- Add 2 teaspoons of olive oil to your baking tray and put this in the oven, the oil needs to be really hot when you add the yorkshire pudding mix
- Add the mix to the baking tray and leave to cook for 20 minutes
