Sweet potato hash

Breakfast is arguably the most important meal of the day, we must ensure that we eat something nutritious, but also something we enjoy! I loved having egg frittatas in the morning, but my new iGg elimination diet means I cannot have eggs. So, I’ve been looking for different breakfast options and my new favourite has got to be sweet potato hash. The recipe below includes enough sweet potato to last 1 working week (Monday-Friday). I boil all of the potato on the Sunday evening to save time in the mornings, everything else I cook and then eat fresh on the day.

All you need…

  • 4 sweet potatoes (enough for the week, use roughly 3/4 of 1 sweet potato per meal)
  • 2 mushrooms
  • 1 sausage
  • 2 handfuls of spinach leaves

How you make it…

  • (the night before, or first morning of your week) peel and dice the sweet potatoes into small squares and boil until  soft, then drain
  • Keep out 1 portion, leave the rest to cool and then place in the fridge for the rest of the week
  • Remove the skin from your sausage and then tear off very small pieces
  • Cut each mushroom into 6 small pieces
  • Add olive oil to your pan and allow it to heat up
  • Start to fry 1 portion of your sweet potato and sausage, when both start to brown add the mushrooms
  • Stir occasionally and when everything is cooked add 2 handfuls of spinach leaves
  • Stir in the spinach leaves and then leave them to wilt for a couple of minutes
  • Serve up and enjoy your sweet potato hash!

I’ve started adding some normal potato to my hash, as well as sweet potato. Its great and makes it a tad less sweet for those early morning starts! i hope you enjoy this recipe, let me know how you find it or if you have any questions 🙂
