Spinach, pea and potato cakes

One of my favourite dishes has got to be spinach, pea and potato cakes. I’ve been making these since last summer and I LOVE them. They can be either a great side dish, or even a main meal. I usually make some and take them into work for lunch at least once a week.

All you need…

  • 5 tablespoons of olive oil
  • 2 large potatoes
  • 2 cups of spinach
  • 1 cup of peas
  • 3 flat tablespoons of gram flour
  • 1 tablespoon of turmeric
  • 1 tablespoon of garam masala

How you make it…

  • Cut the 2 potatoes into small pieces and boil until soft
  • Once soft, mash up the potato in a large mixing bowl
  • Place the spinach and peas in a saucepan with 1 tablespoon of olive oil and heat until the spinach starts to wilt
  • Fry the gram flour until it appears to be lightly toasted
  • Mix in the toasted gram flour and cooked spinach and peas with the mashed potato, whilst mixing this add 2 tablespoons of olive oil and the turmeric and garam masala
  • Use your hands to then shape the mix into flat circles, then fry in a pan with hot olive oil
  • Fry on each side for about 2 minutes and serve when both sides are a light brown

I sometimes cook small pieces of sausage meat and add this to the mixture before I fry them – this can make the cakes that little bit more filling when you are having them as a main meal! They’re also delicious when topped with piri piri sauce!
