Pretty much all of the granola mixes in supermarkets contain gluten free oats, which is something a number of people with coeliac disease cannot actually tolerate. I’ve created and perfected my own granola, the recipe I follow is below. I hope you all like it!
All you need…
- 1/3 cup of almonds
- 1/3 cup of hazelnuts
- 1/3 cup of pecan nuts
- 1/3 cup of coconut flakes
- 1/3 sunflower seeds
- 1/3 pumpkin seeds
- 1/3 cup of coconut oil
- 1/2 cup of honey
- 2 teaspoons of cinnamon
- 1 teaspoon of vanilla essence
How you make it…
- Turn on the oven and heat to 160 degrees
- Pulse the almonds, hazelnuts, pecan nuts, coconut flakes, sunflower seeds and pumpkin seeds in a blender
- Heat the coconut oil and honey together in a large saucepan, when both have mixed together add the vanilla essence
- Remove the saucepan from the heat
- Add the blended nuts and seeds to the saucepan and mix in with the melted coconut oil and honey
- Add the mixture to a large baking tray and flatten it, then place in the oven and leave to cook for 30 minutes
