Homemade granola

Pretty much all of the granola mixes in supermarkets contain gluten free oats, which is something a number of people with coeliac disease cannot actually tolerate. I’ve created and perfected my own granola, the recipe I follow is below. I hope you all like it!

All you need…

  • 1/3 cup of almonds
  • 1/3 cup of hazelnuts
  • 1/3 cup of pecan nuts
  • 1/3 cup of coconut flakes
  • 1/3 sunflower seeds
  • 1/3 pumpkin seeds
  • 1/3 cup of coconut oil
  • 1/2 cup of honey
  • 2 teaspoons of cinnamon
  • 1 teaspoon of vanilla essence

How you make it…

  • Turn on the oven and heat to 160 degrees
  • Pulse the almonds, hazelnuts, pecan nuts, coconut flakes, sunflower seeds and pumpkin seeds in a blender
  • Heat the coconut oil and honey together in a large saucepan, when both have mixed together add the vanilla essence
  • Remove the saucepan from the heat
  • Add the blended nuts and seeds to the saucepan and mix in with the melted coconut oil and honey
  • Add the mixture to a large baking tray and flatten it, then place in the oven and leave to cook for 30 minutes
