My new go to breakfast has become a frittata with either Tesco waffles or hash browns. You can add any vegetable to a frittata, sometimes I add sausage or bacon too.
A number of people message me when I post these breakfast photos on my Instagram so I thought it would be great to share a step by step guide, explaining how I make my delicious frittata for breakfast 🙂
All you need for a sausage and spinach frittata (please note that this frittata recipe fits a 20cm pan)…
- 2 sausages
- 1 cup of spinach
- 2 duck eggs – I’ve found that duck eggs make a frittata much fluffier, but you can use chicken eggs if you prefer
- 1 teaspoon of olive oil
How you make it…
- Chop the sausage into small pieces and roll into little balls
- Chop up the spinach into small pieces
- Add the olive oil to the 20cm pan and allow to heat
- Add the chopped sausage to the pan
- Once the sausage has started to cook, add the spinach and wait for it to wilt
- Whisk 2 duck eggs
- Add the 2 duck eggs to the pan and leave to set, shake the pan slightly every 30 seconds to ensure the egg does not stick
- Once the egg starts to become more solid, flip the frittata
- Allow the other side to cook for around 2 minutes, then dish up your yummy frittata!

- Sausage and spinach
- Butternut squash and green beans
- Sausage, spinach, VioLife cheese and paprika spice (when I add cheese, I whisk it in with the egg)
- Bacon and broccoli
- Broccoli, butternut and potato
