Potato gratin, home bourbons, The Brentwood Kitchen and more…

So the end of this week will mark 1 month of my Lorisian elimination programme complete! It’s actually starting to go quite quickly too πŸ™ŒπŸ».

The Brentwood Kitchen

This week I was so happy when discovering I can enjoy brunch out with my friends at The Brentwood Kitchen! The staff were beyond helpful and so accommodating when talking through my allergies, they took a real interest and explained to me how they would ensure my meal was free from everything I cannot have. They even had duck eggs – which meant I could enjoy scrambled egg with my fry up! I had bacon, sausage, hash browns, spinach, tomatoes and scrambled egg with peppermint tea. Everything was delicious and we already plan to go next week to try their omelettes!

Homemade potato gratin

I stocked up on VioLife cheese this week so thought it was the perfect time to make a cheesy potato gratin. I added olive oil to a baking dish and covered the base in a thinly sliced layer of potato. I then added lots of green beans, spinach and cheese to the middle and topped this with more potato and final layer of cheese. I cooked the dish in the oven at 180 degrees for 25 minutes and paired it with Tesco’s Finest sausages and some of their gluten free gravy. It was a perfect meal to start the week with πŸ‘ŒπŸ».

Peanut butter stir fry

Last week I asked for suggestions on how to improve my stir fry dishes, now that I am no longer able to have any of the stir fry sauces. Lots of people came back to me with suggestions – so thank you very much to all of you 😘.

I decided to try the peanut butter idea this week and I was pleasantly surprised at how much I liked it! I added 1 chopped chicken breast to a marinade, made from 2 teaspoons of peanut butter, 2 teaspoons of coconut cream and some grated ginger for an hour. I then cooked this with my vegetables and rice noodles and added coconut aminos to the whole dish at the end. It was very tasty! Next time though, I think I’ll add a bit more peanut butter to the mix and will leave the chicken to marinate a little longer, so the taste is stronger. Please let me know if you have any other tips/ideas. I’ve got some white rice vinegar now as well which I plan to use next time.

Homemade bourbon biscuits

Since I was little, I always LOVED bourbon biscuits – I used to have them every day for breakfast πŸ™ˆ. Since being diagnosed with coeliac disease, they are probably the hardest thing I’ve had to part with – and the gluten free ones contain dairy, it’s all very upsetting πŸ’”. Because of this, I made it my mission to recreate bourbon biscuits that are gluten, dairy, soy and egg free and I’ve done it! I used to make them every week, but since starting this elimination programme I stopped, until this weekend… I made a giant batch of them and they are sooooo good! I’ll add the recipe to my blog very soon, they are really easy to make and only include gluten free flour, sugar, dairy free butter, cacao and icing sugar!

Dish of the week – penne rice pasta with MOR sausagesΒ 

My favourite meal this week has got to be MOR pork, bramley apple and beetroot sausages with Waitrose own penne rice pasta, with kale and tomato and basil sauce. Such a simple meal but one that was full of flavour! You should all try it out πŸ™‚
